If you have tiktok, and are on “food tiktok” you’ve definitely heard of the feta pasta recipe that left Finland with a shortage of feta cheese. It was originally developed by Feel Good Foodie, but of course, the creative people on the app have taken the recipe and ran off with it, creating their own variations and trying it out in different ways, etc.
OBVIOUSLY, as an avid fan of food tiktok and a creative chef myself, I HAD to put my own spin on the recipe and make it gluten free.
What I Changed:
- I’m not a huge fan of feta, so I swapped it out for possibly my FAVORITE cheese of all time, goat cheese! I just used around an 8 oz tube.
- I added LESS garlic than the original recipe (the original uses 5, but I didn’t want it to be too overpowering, so I used 4)
- I ALSO added some honey to the goat cheese when I baked it, to enhance the creaminess of the cheese as well as add some sweetness that complimented the tomatoes beautifully!
- I made this recipe gluten free and used gluten free pasta! You can choose whatever shape and brand you enjoy most.
The Ingredients-
The ingredients for this recipe are REALLY simple (as they are with most of my recipes)
- Cherry tomatoes: you can use whatever type of cherry tomato you like, but I completely recommend choosing small ones so they blister more quickly in the oven. I just used classic red cherry tomatoes, but you can use heirloom if they are in season!
- Goat cheese: use fresh goat cheese. I used plain, but herbed would also work! I know they sell an amazing herbed chevre at Trader Joe’s.
- Pasta: I used my favorite gluten free pasta, which is barilla plus, but you can use whatever type of pasta you would like!
- Basil: Use fresh basil! It’s so easy to find (or even grow yourself!!)
- Olive oil: This is a dish that really showcases olive oil, and without using a good quality olive oil, the dish WILL taste different. You don’t need to use AMAZING olive oil, but don’t use lite olive oil or anything like that.
- Garlic: You can substitute the fresh garlic for granulated, but I would NOT recommend it. Use 4 cloves of fresh garlic for best results.
- Spices! You just need salt, pepper, red pepper flakes, and oregano.
Instructions:
- The first step of the recipe is to preheat your oven to 400 degrees and set a pot of water to boil.
- In a baking dish add your tomatoes, then add the oregano, salt, papper, red pepper flakes, and about 1/4 cup (half) of the olive oil. Toss until the tomatoes are coated.
3. Add the log of goat cheese into the center of the baking dish, sprinkle with chopped fresh basil and drizzle with olive oil.
4. Bake for ten minutes, then smooth down the goat cheese, top with honey, olive oil, and minced garlic. Bake for another 10 minutes until tomatoes begin to blister.
5. After baking, use the back of your spoon and smash the tomatoes that have not burst while baking. Mix everything together until well combined.
6. Add the pasta and toss together until pasta is completely coated in the sauce.
Notes + Extras!
I don’t have that may notes for this recipe, it is pretty straight forward!
