Hello! This is a rather short recipe today because I wanted to bring you an easy recipe that’s perfect for those work-from-home lunch breaks! This pasta recipe is PERFECT for when you want a delicious home cooked and hearty meal but just don’t have enough time for something elaborate.
Basically, all this recipe is, is pasta, vegetables, oil and butter, and some spices. 30 minutes later, voila! A delicious lunch or dinner!
Notes for this Pasta Recipe:
- If your vegetables are cooking faster than your pasta, remove the pan with the veggies from the heat and place it back on the burner once the pasta is finished cooking.
- If the seasoning I suggested in the recipe is not to your liking, feel free to change it up! This recipe is pretty versatile!

Ingredients for Gluten Free Veggie Pasta
For this recipe, the ingredients I used are spinach, broccoli, bell peppers, and shallots. I loved the way it turned out, but if there are other vegetables you want to add, feel free!
I like to use broccoli, because it provides a lot of substance for a dish that’s vegetarian and can be made plant based pretty easily. Bell peppers sauteed pretty well, but so do cauliflower, carrots, squash, along with many other vegetables.
How to Make this Recipe
I mentioned that this recipe is SUPER easy right? Well here’s the proof: one of the most complicate things you’re going to have to do to make this recipe is make boxed pasta. Start by boiling water, and adding your oil and butter to a large skillet with the shallots. Saute until they are sweated and translucent, like this:
After sauteing the shallots, add the broccoli and red bell peppers (but you can use any color bell pepper for this) to the pan:
Then, add the pasta and water to the skillet with the vegetables once the broccoli has turned a vibrant shade of green. Add the seasoning now, too.
After adding the pasta, add the raw spinach, turn off the heat, and cover the pan until the spinach is wilted. Mix your pasta around and then you’re done! I told you this pasta dish was simple and easy!

The EASIEST Veggie Pasta
Ingredients
- 1 box your favorite type of gluten free pasta (I used Jovial Bow Ties)
- 1 head broccoli, cut into smaller florets
- 1 bell pepper, cut into smaller pieces
- 1 shallot thinly sliced
- 2 cups raw baby spinach
- 2 tbsp butter
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp garlic powder
Instructions
- Prep all of your ingredients: chop your broccoli into bite sized florets, chop your bell pepper, thinly slice your shallots, and boil a pot of water with salt for the pasta.
- Once the water is boiling add your pasta. In a large skillet on medium heat, add your butter and olive oil. Once it heats up, add your shallots and salt and stir until sweated. Add your broccoli and bell pepper and cook until bright green.
- Once your pasta is done, add it to the pan with the vegetables with 3 tbsp of the pasta water. Add the garlic powder and other seasonings and stir until evenly distributed. Turn the heat off on the pan.
- Add the spinach and mix until wilted and combined. Add more salt, garlic powder, or pepper to taste. Serve and enjoy!
