Here’s some info about Celiac Disease – it’s a genetic autoimmune disease that can be triggered at any age. People with Celiac cannot digest the protein of gluten, which is found in wheat, rye, barley, malt, and sometimes oats. When someone with Celiac eats gluten, it can damage their small intestine. This causes severe stomach pain, vomiting, upset stomach, and in extreme cases, malnutrition.
When Celiac goes undiagnosed for an extended period of time, the harmful gluten being digested makes it hard for the body to absorb any nutrients from other foods. So, if someone who is undiagnosed eats a sandwich on whole wheat bread, even the healthy nutrients from the gluten free deli meats and cheeses won’t be absorbed. The good news is that there is an easy fix! that is, easy in comparison to other diseases and autoimmune issues.
People with Celiac Disease have to follow a gluten free lifestyle for the rest of their lives. No gluten whatsoever, because even the smallest trace amount of the protein can significantly harm the digestive tract, especially after shielding the body from attempting to digest gluten for an extended period of time. Being gluten free seems harder than it is! I’ve been gluten free now for over 50% of my life, and any crazy dietary restrictions are 100% worth avoiding the painful side effects of eating gluten. Plus, the food’s good too. And if you don’t believe me, let me prove it to you through my recipes :).
