Preheat your oven to 400 degrees and set a pot to boil pasta.
In a large baking dish, add the tomatoes, oregnano, red pepper flakes, salt, pepper, and half of the olive oil, Toss around until the tomatoes are evenly coated, then add the log of goat cheese into the center of the dish.
Drizzle the goat cheese with some olive oil and sprinkle the chopped basil onto the tomatoes. Bake for 10 minutes.
After baking, smooth out the goat cheese with the back of your spoon and add the rest of the olive oil, the drizzle of honey, and the minced garlic to the top. Bake for another 10 minutes.
After baking, press gently onto the top of the tomatoes to ensure they are burst. Mix together the sauce until fully combined.
Add the cooked pasta to the dish with the goat cheese and tomato sauce, and stir.
Top with shredded parmesan (optional) and serve!
