Why I love this green juice recipe:
This green juice recipe is super simple and easy, but also very hydrating and a great way to start your day if you don’t like coffee or aren’t into caffeine. It’s made with a cucumber, an apple, parsley, and lemon so it’s super refreshing and the most beautiful light green color ever! If you’ve never made green juice, this is a great starter recipe because it doesn’t taste too much like vegetables!
I’ve been drinking a LOT of coffee recently. I just submitted my college applications, I’m in the middle of my senior fall and have a LOT of homework, and of course, I’m just super busy all the time. Instead of starting my day off with coffee, I drank this on election day. Coffee can be bad for people that have anxiety, and sometimes it’s just nice to get a little break. With this recipe, it’s easy and delicious.
The Ingredients for the Green Juice:
There are only 4 (yes! 4) ingredients in this recipe! I told you it was simple! Here’s what you need and here are some substitutes and alternatives. With COVID cases spiking, sometimes you want to just use what you have in the house.
Cucumber
Cucumber has a high water percentage, so it is a SUPER hydrating ingredient in this green juice! When you juice cucumber, not only does it release a lot, but it’s overall just super refreshing. I like to use cucumber because it is super mild and easy to drink. It doesn’t taste overly vegetable-like, and can pair easily with other flavors.
If you don’t have cucumber, feel free to use celery. It will juice the same way, but it has a way more extreme vegetable flavor and I find it is a bit harder to drink.
Apple
I LOVE the inclusion of apple in this green juice recipe because it provides a little bit of sweetness, but there isn’t too much sugar, so it won’t make you shaky or jittery in the morning. It’s just natural sugar.
If you don’t have fuji apple (what I used) you can use any type of apple! For a bit of sweetness, you can also use mango, pineapple, or even carrot! They will change the color, but flavorwise it should work in the green juice !
Lemon
I mainly include lemon for the digestive aid purposes (it’s great to have early in the morning on an empty stomach). It also adds a great bit of tartness to the juice! If you don’t have lemon, of course, lime will work the same way!
Parsley
Parsley is high in vitamins and nutrients, and very rich in antioxidants. Including only 1/4 cup of parsley won’t overtake the flavor of the juice, but it will provide all the health benefits!
I would say you could switch the parsley out for mint, but it would change the flavor and health benefits. If you don’t have parsley, you can omit.

Like any of my juice recipes, the instructions for this green juice recipe are simple!
Cut your vegetables and fruits into a size your juicer can manage, then pass them through the juicer.

Hydrating Green Juice
Ingredients
- 1 large cucumber
- 1 apple
- 1 lemon
- 1/4 cup parsley (stems are fine, as well as leaves)
Instructions
- Cut your apple and cucumber into a size your juicer can handle, then peel your lemon. Add the prepped ingredients to a bowl. measure out 1/4 cup of parsley and add that to the bowl as well.
- pass your ingredients through the juicer, then stir and enjoy!
