Okay seriously, who doesn’t need this recipe in their life? Everyone loves a good belgian waffle with fruit and whipped cream, BUT you can completely upgrade your weekend breakfasts or ANY dessert with these gluten free (or not) chocolate belgian waffles! They are not complicated to make, as long as you have an electric mixer, and honestly, SO fun to make. WHo doesn’t love waffles? These waffles especially, are SUPER cozy for this years holiday season.
Before we get started: here are my notes on the recipe!
- Be careful when folding the meringue into the rest of the batter! If you beat it too much, all the air will come out and the end result could be super rubbery and flat. If you’re careful and fold it in with a silicone spatula, the chocolate belgian waffles will be SUPER fluffy. It can be kind of messy to make sure it is incorporated, but it’s so worth it.
- Cook according to your liking! I have a cuisinart waffle maker and I like to put it on 5. A higher setting will probably work better, so the outside gets crispy.
- You can use whatever toppings you would like, but I prefer to keep it simple in this case! The recipe is SO good, and light amounts of powdered sugar just feels right. I would also put strawberries or raspberries on these, however. Because…yum.
- Sift your dry ingredients!! The batter can get lumpy very quickly, and then it becomes almost impossible to make. Sift your cocoa powder and gluten free all purpose flour! It’s worth it!
- Do not get any egg yolk in the whites while separating! That will prevent the meringue from whipping properly.
The Ingredients
For this recipe, the ingredient list is kind of long, but they are all relatively simple items!
You’re going to need whole milk, eggs, gluten free all purpose flour, cocoa powder, sugar, baking powder, butter, and vanilla extract. Also, whatever you want to top with! I used powdered sugar.
The Dry Ingredients + Instructions
The first step of this recipe is to deal with the dry ingredients. Sift together the flour, cocoa powder, and baking powder, then whisk together with the sugar and the salt.
Don’t add the sugar and salt into the sifter, because most of the time they will be too coarse to pass through. It is more efficient to just add them after!
Making the Batter:
After melting your butter, whisk together the egg yolks, milk, butter, and vanilla.
The next step is to make the egg white meringue in an electric mixer. You could theoretically do this step by hand, but it would take probably a year. It’s better to do it electrically.
Whisk together the wet mixture and dry mixture while the egg whites are mixing. Do this with a silicone spatula, not a whisk.
Add the egg whites into an electric mixer on high and whip until fluffy, like in the pictures below.
Then, gently fold the meringue into the rest of the batter.

Gluten Free Chocolate Belgian Waffles
Ingredients
- 3 cups gluten free all purpose flour (I used better batter)
- 1/3 cup granulated sugar
- 2 tbsp cocoa powder
- 4 tsp baking powder
- 1 tsp salt
- 3 cups whole milk
- 6 eggs seperated into whites and yolks
- 1 stick melted butter
- 1 tbsp vanilla extract
Instructions
- First, add the flour, cocoa powder, and baking powder into a sifter and sift into a large mixing bowl. Once it is all sifted into the bowl, add the salt and granulated sugar and use a metal whisk to fully combine.
- In a large electric mixer, whip the egg whites until completely fluffy, like a meringue. They should be bright white and fluffy, like clouds.
- In a medium mixing bowl, whisk together the melted butter, egg yolks, and milk until fully combined. Add the wet ingredients to the large bowl with the dry ingredients and use a silicone spatula to mix together until smooth.
- Add the whipped egg whites to the batter and gently fold into the rest of the batter until smooth. DO NOT mix vigorously, as this will knock ALL the air out of the meringue and the batter will fall.
- Cook according to the directions on your waffle iron, then serve fresh dusted with powdered sugar. Enjoy!
