I’m a huge fan of avocado toast! I mean, who isn’t? It’s the perfect trendy breakfast to have with some iced coffee, maybe fruit on the side, and it’s super easy to make! All of these variations on classic avocado toast should take under 5 minutes to make, and they are all super yummy!
This blog post includes four avocado toast ideas: strawberry and goat cheese with a balsamic glaze, smoked salmon and chive, radish, honey and red pepper, and soft boiled egg with arugula and cherry tomato.
#1 – Avocado Toast with Strawberries, Balsamic, and Goat Cheese
The ingredients for this variation are all fairly simple! Your favorite gluten free bread, 1/2 an avocado (for 2 slices), a few strawberries, about one tablespoon of crumbled goat cheese, and about 2 teaspoons of balsamic glaze.
After making your classic avocado toast base, add two sliced small strawberries to the top of the avocado layer.
All that’s left to do is add the crumbled goat cheese and balsamic glaze!
If you don’t have balsamic glaze…
You can always make some! It’s super easy to do and only requires one ingredient: balsamic vinegar. Add about 2 tablespoons of balsamic to a pot and reduce on high heat until significantly thicker.
Then, just drizzle on top of the toast and serve!
#2- Avocado Toast with Smoked Salmon and Everything Bagel Seasoning
There are three ingredients in this recipe, other than the toast base. All you need is cold smoked salmon (you could use hot, but I prefer cold), everything bagel seasoning, and chives. I use trader joe’s Everything But The Bagel, and it’s SO good, but you can use whatever everything bagel seasoning you have.

All you need to do to make the avocado toast is add the salmon on top, sprinkle your seasoning on, and add your chives!
This recipe is probably the most simple of all of the recipes in this post! It’s easy, VERY quick to make, and so yummy! It’s a great take on the classic bagel with lox!
#3- Avocado Toast with Radish, Honey, and Red Pepper Flakes
The ingredients to make this type of creative avocado toast are radishes, honey, microgreens or another type of sprouts, and red pepper flakes.
The first step is to lay the radishes on top of the avocado layer, but I like to do that in a way that adds more aesthetic value more than radish flavor. Don’t get me wrong, I do enjoy radishes, but I think it’s better in moderation.
After the radishes are on, add sprouts.
Then, add honey (I personally think that just a drizzle is best so the toast isn’t too sweet), and a generous amount of red pepper flakes for some nice spice.
#4 – Avocado Toast with Arugula, Cherry Tomato, and Soft-Boiled Egg
Now, making the soft boiled egg is by far the most dauntine part of the recipe. Even though boiling an egg isn’t too difficult, it can be nearly impossible to peel it perfectly, which is completely ok in this case! The egg is sliced-side-up so it really doesn’t need to look perfect.
The ingredients for this version are a little more extensive: one egg, about one teaspoon of olive oil and 1/2 teaspoon of lemon juice, a few arugula leaves (probably a small handful) and of course, some tomatoes.
Toss the arugula with lemon juice and olive oil, and chop the cherry tomatoes.
Add the hardboiled egg on top and you’re done!! Happy eating
