This Instant Pot BBQ Chicken is the easiest barbeque chicken you will ever make! Seriously, there are minimal ingredients, and start to finish the whole recipe probably takes less than 30 minutes. This barbeque chicken can be made in an instant pot, ninja foodie, or really any pressure cooker, and the end result is to die for! Looking for an easy weeknight dinner? Look no further! Use this Instant Pot barbeque chicken in salads, on a gluten free roll, with coleslaw, or however you want to enjoy it for a quick and easy, but impressive meal!
My Tips!
As always, of course I have tips on how you can make this recipe the best it can be 🙂
#1 – Buy good barbeque sauce.
If you are making this recipe gluten free, make sure you chose a good barbeque sauce that is LABELLED GF or that you know has no gluten. I didn’t make my own barbeque sauce because, honestly, that takes all the ease away from the recipe. I used Stubb’s and I highly recommend it if you like a little bit of spice.
#2 – When cooking down the sauce in the final step, don’t reduce it too much.
Reducing the sauce too much can cause overcooked and rubbery shredded chicken. Cook it to the point where it clings to the chicken, but isn’t one thick blob.
#3 – Make extra!
It’s back to school season, which means you probably have a CRAZY little amount of time to cook. Make this recipe ahead of time for the week! Double the recipe, or triple it! Having extra is good and it can store for about a week!
Ingredients
All you need for this recipe is chicken, barbeque sauce, water, and some spices. The spices are simple, and you probably already have them in your house: paprika, red pepper flakes, salt, pepper, and granulated garlic.
Simple Instructions
The instructions for this recipe are VERY straightforward!
Mix 1 cup of the barbeque sauce with 1/2 cup of water and stir together.
Add the watered down bbq sauce, and your chicken breasts to the instant pot/pressure cooker/ninja foodie.
Set to cook with 5 minutes on high pressure. Once time is up, let cool for another minute before opening the pressure valve.
After opening the pressure valve, remove your finished chicken from the instant pot and shred them using two large forks.
While you are shredding the chicken, either transfer the remaining bbq liquid into a large saucepan and simmer until half the volume, or use the saute feature of your ninja foodie to simmer.
Once simmered and significantly thicker, add the pulled chicken back into the sauce.
Now, make the spiced barbeque sauce. Combine 1/2 cup of barbeque sauce with 1 tsp salt, 1/2 tsp red pepper flakes, 1/4 tsp garlic granules, 1 tsp paprika, and 1/2 tsp black pepper.
Add that spiced BBQ sauce to the pot with your chicken, turn the heat up to medium, and continue to simmer until desired thickness.
