Hope you guys enjoy this innovative take on mini shrimp tacos! These are great for entertaining (I made them recently for an event) or as an appetizer before dinner! The crunchy tostitos filled with the tender shrimp, sweet and spicy salsa and creamy guac makes these shrimp taco bites COMPLETELY addictive.
My Recipe Notes-
I’m starting off this post with my notes on the recipe, because although the instructions are simple, this recipe can be a little time consuming.
#1- ONLY USE THE GOOD CHIPS!! It’s a pain to go through a bag of tortilla chips, I know, but the final product will be so much better if all of the chips can hold the guac, salsa, and shrimp without spilling them. Get rid of any broken or flat scoop chips.
#2 – You can buy store bought mango salsa. I made my own, because it’s quite easy and something I genuinely enjoy making, but if you’re in a time crunch, you can certainly buy mango salsa at the store! Same goes for the guacamole (I bought mine).
#3 – Cut the shrimp in half! By cutting the shrimp in half after grilling them, you can increase your yield of total taco bites and it won’t be so hard to fit the shrimp into the scoop chips.
#4 – Buy your shrimp peeled and deveined! It’s so much easier than doing it yourself and makes the recipe less time consuming.

Ingredients –
This recipe, similar to a lot of my recipes on this blog, is completely customizable! If you don’t want to use guac or mango salsa, you can be creative and switch it up and use pico de gallo, sour cream, hot sauce, cheese, queso sauce, or anything else you prefer!
In my opinion, however, the BEST combo is guacamole and mango/pineapple salsa with a grilled shrimp on top. It’s amazing!
If you chose to make the mango salsa or guac at home, obviously you’ll need the ingredients for those (you can find a mango salsa recipe within this blog post of mine from a few weeks ago). Essentially, all you need for this recipe is mango salsa, guacamole, Tostitos Scoops, shrimp, salt, olive oil, and pepper.
Grilling the Shrimp
All you need to do to cook the shrimp is toss it in some olive oil, salt, and pepper and then pop it on the grill (high heat, of course) and cook it for 3-5 minutes per side OR until fully cooked!
** SIDE NOTE- make sure your shrimp is cooked! It shouldn’t be clear in the middle AT ALL! I recommend cutting it in half and ensuring one is cooked before removing the others.
Assembling the Shrimp Taco Bites
The first step would be laying out all of the Tostito Scoop chips to ensure they’re all in good condition, then spoon some guac into each chip and spread it around with the back of a spoon, like this:
After that, spoon in the mango salsa. I only added a little bit of the mango salsa in each, as to not crowd the chips too much.
After, of course, the last step is to add the cut up shrimp!

Mini Shrimp Taco Bites
Ingredients
- ~100 perfect Tostito Scoops, about one large bag (see my recipe tips about seperating chips)
- Guacamole (I bought mine)
- Mango Salsa, store bought or homemade (Mine is homemade, and a recipe is linked in this post)
- 2 lbs already peeled and deveined shrimp
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Start by separating out your chips, because it takes the most time by far. Arrange your chips on a large platter (or multiple).
- Toss your shrimp in a large bowl with the salt, pepper and olive oil. On a grill heated to high heat, grill the shrimp for 3-5 minutes per side, or until fully cooked. There should be NO clear on the inside if you cut into the shrimp.
- Fill each scoop chip with about 1/2 tsp of guac, using a small spoon. With the back of the spoon, spread the guac around the base of the scoop chip.
- Add the mango salsa into each chip so they are mostly full, but there is still room for the shrimp.
- Once the grilled shrimp has cooled off considerably, cut each large shrimp into thirds and each smaller shrimp into halves, then place them on top of the chips and serve.
