I’ve been trying to eat less sugar, which for me, seemed easy! I am NOT a huge fan of overly cloying or crazy desserts, rather, I just love fruit. All types of fruit. Oh, and ice cream. “Classic” ice cream, however, is EXTREMELY high in sugar and calories, but it’s just so delicious. For all of my fellow fruit lovers out there, I’ve worked on this amazing ice cream alternative made with all naturally plant based ingredients.
Naturally Gluten Free Ingredients!
All of the ingredients in this SUPER easy and healthy recipe are naturally gluten free, and it is COMPLETELY possible to make plant based as well! Just substitute the kefir for an almond milk creamer, and use any plant based yogurt instead of the greek yogurt.
All you need to make this recipe is:
Bananas (frozen, and fresh), greek yogurt, kefir or a thicker creamer, maple syrup (optional) and blueberries (frozen).
Super easy instructions!
Start by adding the kefir and the fresh banana to a large blender, and puree until smooth.
After this, add the greek yogurt and the frozen banana and maple syrup if you want, and blend more until fully combined. The mixture should be thicker, but very creamy.
Take 2/3 of the banana nice cream base and transfer it into a large bowl. Then, add the frozen blueberries and blend until fully combined and one color.
Transfer all of the blueberry ice cream base into a large bowl as well.
In a glass casserole dish (I used a 9×9 inch pyrex dish) add spoonfuls of the blueberry banana nice cream, and spoonfuls of the banana base. Try to keep the different bases as separate as possible, this will create the marbles effect that looks SO pretty after you scoop it.
After the base has been laid down, and the entire bottom of the casserole dish has been covered, use the back of a large spoon to swirl the different types of nice cream together. it should look like this:
Then, add more spoonfuls of each type of ice cream on top and repeat the same process to create a more marbles effect. Then, freeze overnight!
Once frozen, scoop the ice cream and top with frozen blueberries!
The marbled effect will look SOOO pretty. As well as being beautiful, this ice cream (“nice” cream) is SO healthy and delicious. Happy cooking! Enjoy 🙂
Healthy Blueberry and Banana Nice Cream
Ingredients
- 1 fresh banana
- 2 tbsp kefir yogurt drink
- 2/3 cup greek yogurt (I used 0% fat)
- 3 frozen bananas
- 1 tsp maple syrup
- 1 cup frozen blueberries
Instructions
- Puree together the fresh banana and the kefir until combined. Then, add the frozen banana, maple syrup, and greek yogurt. Blend for at least a minute until fully combined. The ice cream base should be creamy, and thick.
- Reserve 2/3 of the banana nice cream base and transfer it into a large bowl. Add the frozen blueberries to the blender and puree with the 1/3 of the banana nice cream base. Blend until the ice cream is one solid purple color.
- Add large spoonfuls of the banana ice cream base and the blueberry base to a glass casserole dish (mine was 9×9 inches). Once the bottom of the dish is covered, use the back of a large spoon to marble together the different colors of ice cream. If you're uncertain, please look at the photos in the blog article above.
- Once that layer is done, continue adding the rest of the banana base and the blueberry base until all of it is in the casserole dish. Repeat the marbling process and freeze overnight.
- When you are ready to enjoy, take the ice cream out. I recommend letting it sit at room temperature for 15-20 minutes so it is easier to scoop. Scoop the ice cream, top with frozen blueberries, and serve.
