Why I LOVE these popsicles:
I’ve always LOVED popsicles: making them and eating them. I can be so creative when coming up with recipes, so I’ve decided to come out with 4 popsicle recipes every week during the month of August!
These popsicles are inspired by my absolute favorite type of coffee: Vietnamese coffee!! It’s essentially just coffee with sweetened condensed milk… and I’m obsessed with it. When I was really addicted to coffee, I drank one of these every single day.
So, these popsicles are completely inspired by my amazing everyday coffee recipe from about a year ago!
What I use to make these:
For my popsicle maker, I used the ZOKU popsicle molds. They work perfectly for this recipe because they help make the layers perfectly ombre.

Ingredients
For this recipe, you only need 2 ingredients!
Cold brew coffee, and sweetened condensed milk.
Instructions:
The first step is to mix 3/4 cup of cold brew coffee with about 1/2 tsp of sweetened condensed milk.
Pour just a very little bit of the cold brew mixture into the popsicle molds to create the first layer of the popsicles.
The bottom of the stick shouldn’t touch the cold brew mixture. It should look something like this:
Next, freeze for 5-6 hours.
Mix the next layer by mixing 1 cup of cold brew with 1 tbsp of sweetened condensed milk.
Then, pour about a one inch layer of this mixture on top of the first layer. Stretch cling wrap over the popsicle mold base and poke holes in the top of it with a knife to create slits for the sticks.
Seperate the sticks from the base cups and insert the sticks into the popsicle molds.
Freeze this layer for around 5-6 hours again before mixing 1 cup of cold brew with 2 tbsp of sweetened condensed milk.
Then, use scissors to carefully remove the cling wrap and pour the third layer to the top of the popsicle molds.
Next, freeze the last layer overnight or for 8 hours and remove from the molds by running under hot water for around one minute. The finished popsicle should look like this:

Cold Brew Coffee Popsicles
Ingredients
- 1 Bottle Cold Brew Coffee
- 1 Can Sweetened Condensed Milk
Instructions
- Mix 3/4 cups coffee with 1 tsp of sweetened condensed milk and pour into the bottom of each popsicle. Do not pour too much, the bottom of the stick should not touch the cold brew layer.
- Freeze for 5 hours, then remove from the freezer and take the sticks out of the molds. Take the base cups off of the popsicle sticks.
- Mix 1 cup of cold brew with 1 tbsp of sweetened condensed milk. Pour the coffee mixture into the molds (the layer should be around 1 inch thick).
- Stretch cling wrap over the base of the molds and poke holes into the top with a knife. Insert the sticks into the cling wrap.
- Freeze for 6 hours until frozen, then mix 1 cup of coffee with 2 tbsp of sweetened condensed milk. Cut the cling wrap away with scissors and pour this coffee mixture into the molds until full. Freeze overnight (or 8 hours) and remove from the molds by running them under hot water.
