Why I LOVE these pancakes
Gluten Free Banana Chocolate Chip Pancakes are SO easy!! All it takes is a few ingredients you probably already have, a blender, and whatever toppings you want. They take only a few moments to make, as well. Because of this, they are the perfect weekday breakfast for when you are too rushed to whip up something time-consuming. The batter takes 5 minutes to make, and the pancakes only cook for 3 minutes on each side.
They are healthy AND taste good! There is nothing artificial in these pancakes. They are made with whole ingredients! The only grain in the the batter is rolled oats, and since those are a whole grain, there are no simple carbs! Plus, these pancakes are naturally sweetened and flavored with banana and cinnamon.
They are customizable. The batter itself isn’t customizable, but you can add whatever you want inside! I chose bananas and chocolate chips, because they go so well together and taste amazing with the cinnamon in the batter. Plus, there’s already banana in the batter! It works perfectly. But, you can add whatever you want!
The simple ingredients:
There are only a few simple ingredients in this recipe! For the batter:
- Certified gluten free rolled oats: if you have Celiac Disease, it is SO important to get a certified gluten free brand of rolled oats. I personally like to stay away from Bob’s Red Mill. I tested the Bob’s Red Mill oats in my Nima Sensor, and they came back with low levels of gluten, however, when I tested the Trader Joe’s oats, they came back gluten free! I trust trader Joe’s, so I use that brand, but you use whatever works for you.
- Bananas: I like to use slightly overripe bananas to get a sweeter flavor.
- Eggs
- Cinnamon: it’s optional, but I LOVE the flavor.
- Baking Powder: I like to use baking powder to make the pancakes a little bit taller and fluffier!
- Salt: These balance out the sweetness of the bananas, as well as reacts with the baking powder to create the rise I love.
The easy instructions:
Because I wanted to create a recipe that is literally the easiest thing to whip up, I make the pancake batter in a blender! It takes NO time, and I seriously cannot express to you how easy it is. Pancakes are no longer a hassle to make!
First, add the oats to the blender and create your own homemade oat flour, then add all the other ingredients and blend until combined. Now the batter is done!
Heat a pan on medium heat, and all 3 thin slices of banana and a few chocolate chips to each. Then, add a small amount of batter over the top of the banana and chocolate.
My tips:
#1: Keep the heat on medium! It can be easy to brown the pancakes too quickly without cooking them all the way through.
#2: Don’t take them off too early!! If you remove the pancakes off the skillet too quickly, the bananas won’t caramelize. Part of the reason why banana pancakes are heavenly is because the bananas get all warm and gooey on the inside but SO browned and caramelized on the outside.

Easy and Healthy Gluten Free Banana Chocolate Chip Pancakes
Ingredients
- 1 cup certified gluten free rolled oats
- 1/2 cup almond milk
- 2 large bananas
- 1/2 tsp cinnamon
- 1/8 tsp salt
- 1/2 tsp baking powder
Whatever toppings you want! I used more bananas, blueberries, chocolate chips, raspberries, and warmed maple syrup
Instructions
- Add the oats to a blender and pulse until finely ground. Add the rest of the ingredients to the blender and blend until fully combined.
- Heat a pan on medium heat and spray with cooking spray. Using an ice cream scoop, add three scoops of batter to the pan to create three pancakes. Add three slices of banana to each pancake, and a handful of chocolate chips. Drizzle a little bit of batter over the bananas and chocolate chips.
- After about 4 minutes, flip the pancakes and cook again for 4 minutes. Remove from the heat and repeat until all the batter has been made into pancakes.
- Add the pancakes to a plate and add your favorite toppings! Drizzle with warm maple syrup, serve, and enjoy!
