Slice and cut your Odd Bagel Everything Bagel in half. Toast it for a few minutes until your desired level of crispy. Personally, I recommend a nice golden brown.
Let the bagel cool for about 10 minutes, then, spread cream cheese on one half and mash your avocado on the other half. On top of the avocado, add the slices of red onion.
Add the smoked salmon on top of the cream cheese.
To a bowl, add the salt, oil, lemon juice, and arugula and mix with your hands until combined and all the arugula is evenly coated. Add the arugula to the top of the avocado and onion layer.
Fold the bagel together (gently) and slice it in half.
