Battered Gluten Free French Toast

Servings 6 Servings

Ingredients
  

  • 1 loaf gluten free bread I like Schar brand
  • 2/3 cup whole or 2% milk
  • 1/3 cup gluten free all purpose flour
  • 2 tbsp sugar
  • 1/2 cup heavy cream
  • Powdered Sugar, optional
  • 1 cup assorted berries (Strawberries, blueberries, raspberries, etc)

Instructions
 

  • In a large 9x9 dish, whisk the eggs together until one solid pale yellow color.
  • Add the milk to the eggs and whisk until combined, then either sift the flour and sugar into the dish and whisk together OR add the milk and egg mixture and the flour and sugar to a blender and blend until combined and thicker.
  • Add two or more slices of bread to the dish. Soak for 2 minutes on one side, then flip and soak for about 5 minutes on the other. This will make sure the batter seeps into the slice of bread, not just coat the outside.
  • On medium heat, and a generous amount of butter to a large skillet. One heated, add the 2 pieces of battered toast and cook for about 5 minutes per side until golden brown.
  • Make the whipped cream by whipping heavy cream with a spoonful of powdered sugar until soft peaks.
  • Plate the french toast and decorate according to your liking! I decided to mimic the American flag, however, you can use your red and blue berries however you'd like!
    Top by dusting some powdered sugar on top, and serve.
